Here is my long-term experience of using an eSIM in India on both Android and iOS devices. Webgiffgaff SIM cards will only work in unlocked phones (or phones locked to the O2 network). Please try syncing your iPhone with iTunes and the SIM not supported message will disappear and your problem will be resolved.
